  1. Heat the skillet until a few drops of water “dance” across the surface when sprinkled across the pan.
  2. Beat the eggs and sugar by hand with a little of the milk and whisk vigorously.
  3. Sift in the flour gently to avoid lumps. If lumps appear, push the mixture thru a sieve after adding the remaining milk.
  4. Add the remaining milk and any optional ingredients such as cinnamon, vanilla or other flavoring.
  5. The batter should be a bit runny. Add a teaspoon of milk at a time if the batter thickens up too much. Pour about a 1/4 cup of batter into the hot pan after spraying the pan with a non-stick spray or coating it with butter/ghee.
  6. Working quickly, roll the pan around until the batter spreads out, if you don’t have a crepe rake to spread the batter thinly around the pan.
  7. Cook until the edges of the crepe turn a bit brown and the bubbles in the batter pop. About 2 minutes. Turn over and cook the opposite side.
  8. Remove from pan and put into a warmed container if using immediately. Wrap whatever ingredients suit your fancy and enjoy!
