1-to-1 GF Mix (Bob’s Red Mill copy)
Look. We ALL know that there are great companies out there who put together gluten free flour mixes by combining just the right amount of this rice flour with that guar gum and voila! You can cook almost anything again! But these mixes aren’t appropriate for every baked item out there. Some are better for cookies while another is better for cake texture, while another is better for tempura or bread. Making a few quick cookie batches recently for the kids and their friends, I ran out of the 1-to-1 and needed an alternative. Bob’s Red Mill is a great mix that I’ve used quite a bit, especially for my chocolate chip cookies, as one kid likes them a bit on the crunchy side. I split the recipe and add a bit of coconut milk for the youngest, who likes them fluffier and softer.

After a bit of research, falling down many internet rabbit holes, and too much math for my liking, I present THIS! Many GF families already have most of these ingredients on hand because we have to make substitutions for everything. I’m also an avid fan of labeling since I transfer everything to sealed containers to keep out moisture and pests.
- 1/2 cup sweet white rice flour
- 1/2 cup brown rice flour
- 1/2 cup potato starch
- 1/4 cup sweet white sorghum flour
- 1/4 cup tapioca flour
- 1 tsp xantham gum
- In a large bowl, sift together all of the ingredients until well blended. Store in an airtight container for later use.
